Coconut quinoa porridge

Coconut quinoa porridge

½ dl white quinoa
1 dl water
1 dl coconut milk
1 vanilla pod
A pinch of salt
1 cinnamon stick (the small ones)
Grated zest of ½ lemon
1 dl almonds
½ banana
1 tbsp. honey

  1. Roast the almonds in a pan.
  2. Put the water, coconut milk and quinoa to a boil and add salt.
  3. Cut open and add vanilla pod and cinnamon stick, and let simmer while stirring for about 10 min.
  4. Add the grated lemon peel, remove the pan from the heat and pour the porridge into a serving bowl.
  5. Remove the cinnamon stick from the porridge.
  6. Chop the almonds, cut the banana into slices and sprinkle both over the porridge.
  7. Drizzle with honey and serve!
