Coconut quinoa porridge
½ dl white quinoa
1 dl water
1 dl coconut milk
1 vanilla pod
A pinch of salt
1 cinnamon stick (the small ones)
Grated zest of ½ lemon
1 dl almonds
1 tbsp. honey
- Roast the almonds in a pan.
- Put the water, coconut milk and quinoa to a boil and add salt.
- Cut open and add vanilla pod and cinnamon stick, and let simmer while stirring for about 10 min.
- Add the grated lemon peel, remove the pan from the heat and pour the porridge into a serving bowl.
- Remove the cinnamon stick from the porridge.
- Chop the almonds, cut the banana into slices and sprinkle both over the porridge.
- Drizzle with honey and serve!
